30-Minute Shrimp Pasta

Ideal for a simple weeknight dinner or a romantic evening in, this Mediterranean-inspired meal requires fewer than 10 ingredients, making it both easy to prepare and nutritious, guaranteed to tantalize anyone's taste buds. Find the recipe below!




Ingredients:


1 lb of peeled and deveined shrimp

1/2 box of linguine pasta 

1/4 cup diced parsley 

1 whole lemon, juiced 

2 tbsp white wine 

4 cloves of garlic 

4 tbsp of salted butter 

Liberal extra virgin olive oil 

Pinch of Salt

Grated Parmesan Cheese


Ingredients for Shrimp:


1 tsp Pepper

1 tsp salt

1 tsp Crushed red pepper flakes

1 Tbsp Lemon Juice


Steps:

  • Boil 8 cups of water in a large pot, and add some sea salt when boiling. Add the pasta and boil to the package directions. Save 1/4 cup of pasta water and set to the side.

  • Pat dry the shrimp, and season with salt, pepper, crushed red pepper flakes and lemon juice. Set aside for 10 minutes while preparing other ingredients.

  • Heat a pan over medium high heat, and add a few tablespoons of olive oil. Add the shrimp, 7-9 at a time and sear them for a few minutes, flipping in-between. Do NOT over cook as we will add these back into the pasta. Set aside when all are cooked.

  • De-glaze the pan that the shrimped was cooked in by pouring in white wine and bringing down to a simmer. Stir to make sure the "Remnants" from the cooked shrimp ar combining with the wine.

  • Add the lemon juice, garlic, and butter. Continue stirring occasionally to make a fragrant broth. Add back the pasta, the pasta water, a pinch of salt, parsley, and stir the noodles into the broth to ensure everything soaks in. Add the shrimp back in, plus another tablespoon of olive oil. After a few minutes, transfer the pasta to a large bowl. Sprinkle fresh grated Parmesan cheese on top and any remaining parsley. Enjoy! Makes 8 servings.
