Tofu Scramble


Regardless if you are Vegan, Egg-free, or are just wanting to shake up your breakfast, try this dish!

This dish makes 2 servings. (20g of protein each!)


Ingredients:

-1 block extra firm tofu

-1/3 cup chopped kale

-1/4 cup diced red onion

-1/4 cup diced green bell pepper

-4 mini Bella mushrooms, diced

-1 large garlic clove, minced

-1/4 cup diced tomato

-1 tsp turmeric powder

-1 1/2 tsp nutritional yeast

-1 tsp garlic powder

-1/2 tsp onion powder

-Salt & pepper

-Liberal olive oil


Steps:

-Press the tofu with a paper towel to soak up excess water.

-Dice all the vegetables and set seasonings aside

-heat a skillet to medium heat, and about 2 tablespoons of olive oil. Add all the vegetables when the pan is hot. Sauté for about 5 minutes.

-Crumble the tofu into the pan until it is all broken. Sauté for a few more minutes. Add more olive oil, and all the seasonings. Mix and break down the tofu until it has the desired texture and color.

-Enjoy by itself, on a sandwich, or in a burrito like I made!
