Japanese Sweet Potatoes with Maple Tahini Butter

Looking for a perfect side dish for grilling this summer? Or use this as a base to a main dish. This Sweet and salty dish takes your typical baked potato to another level, sure to impress you and your guests.



Ingredients:

- 3 (or more) Japanese sweet potatoes

- 1 Tbsp of Tahini

- 2 Tbsp of room temp butter

- 1 tsp of maple syrup

- *optional* 1 tsp of white miso paste

- olive oil


Steps:

- preheat oven to 400

- rinse and scrub the outside of the potatoes, dry them. Poke the potatoes with a fork all around to create air pockets.

- place the potatoes on a sheet pan lined with foil or parchment paper, and rub some olive oil all around them.

- bake for an hour, flipping halfway.

- set aside and cover with foil so they cool a bit

- while they bake add all additional Ingredients to the room temperature butter, and whisk together until combined.

- Cut the potatoes open, and add some of the tahini butter on top . Enjoy!
