Ingredients:
- 1 can black beans drained and rinsed
- 1 green bell pepper, diced
- 1 tomato, diced
- 1 can of whole kernel corn
- 1 bunch of cilantro
- 1 package of corn tortillas
- 1 ripe avocado
- taco seasoning mix or: 1 teaspoon chili powder 1 1/2 teaspoon cumin, 1 teaspoon garlic powder, 1/2 teaspoon smoked paprika
- Salt and pepper
Steps:
- make black bean spread by smashing the beans over medium high heat with oil of choice. They should come together to create a thick spread, these shouldn’t be the same texture as refried beans, but that would be great as well .
- Char the corn kernels on a skillet with high heat. Move the corn around in the pan frequently until the corn has a nice char and it smells somewhat sweet. Take off the heat and set it aside
- Dice the tomato and green pepper. Set aside
- Heat your corn tortillas in a non-stick pan or skillet on a high heat. Make as many tortillas as you’d like!
- Assemble the taco by spreading on the black bean spread, pieces of avocado, green bell pepper, tomatoes, charred corn, and top with minced cilantro. Yum!
